Claire - I pondered the egg substitution for a good long while before deciding to go for the 1/2 cup soy yogurt, really more on a hunch than anything else (soy milk replaced the milk 1 for 1 and soy yogurt and flax meal + water replaced the egg). You are right, an egg accounts for a 1/4 cup volume (mostly liquid). I was thinking that the soy yogurt is more viscous than an actual egg and thought the 1/2 cup would give me some extra liquid (fearing possible dryness) – and I was also thinking I could do with the extra binding and softening insurance – I was erring on the side of overcompensating I guess, because I had never made danish dough before – but it worked out well! :)
