&lt;strong&gt;&lt;em&gt;Claire &lt;/em&gt;&lt;/strong&gt;- I pondered the egg substitution for a good long while before deciding to go for the 1/2 cup soy yogurt, really more on a hunch than anything else (soy milk replaced the milk 1 for 1 and soy yogurt and flax meal + water replaced the egg). You are right, an egg accounts for a 1/4 cup volume (mostly liquid). I was thinking that the soy yogurt is more viscous than an actual egg and thought the 1/2 cup would give me some extra liquid (fearing possible dryness) - and I was also thinking I could do with the extra binding and softening insurance - I was erring on the side of overcompensating I guess, because I had never made danish dough before - but it worked out well! :)</description>

I also had to do it all by hand; however, I cheated a little and used a mixer for the worst part of the dough-making so I didn&#039;t have the liquid escaping the flour wall issue. My fiancee did, though. It was funny listening to her story about it. Someone should have warned us all. Thanks for the vegan tips, I know someone who will love to have this recipe.</description>
